LOL, I know what you mean, SofiaCooks. My wife used to have teh same problem. TBH, the best trick is to blanch 'em. Cook 'em for just a minute or two in boiling water, then throw 'em straight into an ice bath. Stops the cooking, keeps the color. Then, when you're ready to serve, just a quick sauté or steam. Don't overcook 'em. That's usually what makes 'em wierd and dull. Simple, but works like a charm. :)
