Hello there! For weeknight pancakes, baking powder is definitely the better choice compared to yeast. Here is why:
  • Speed: Baking powder reacts immediately with the wet ingredients and heat, giving you a fast, reliable rise without any waiting.
  • Texture: It creates a light, tender crumb ideal for traditional American-style pancakes.
Yeast requires a long fermentation and proofing time, which makes it impractical for a quick weeknight meal. Stick to baking powder and you will get great results every time!

YOU ABSOLUTELY WANT TO USE BAKING POWDER FOR TRADITIONAL PANCAKES! Yeast is completely wrong for this type of quick breakfast because it needs hours of proofing time to develop any kind of rise. Baking powder is a chemical leavening agent that activates instantly when it mixes with your wet ingredients and hits the hot griddle! This gives you that classic, tall, fluffy stack without any waiting around on a busy weeknight. Just mix it directly into your dry ingredients, combine everything gently, and cook right away for the best results possible every single time!

Use baking powder for pancakes. Yeast takes too much time to ferment. Baking powder gives a quick rise and costs less per batch. It is the best option for quick cooking.
