My cousin claims you can get a "crispy" finish without oil... how?? Things were simpler when we just used fat! Is it even possible to get a crunch without all these chemical sprays???

Hello Carlos. Yes it is entirely possible to achieve a crispy texture without adding oil by utilizing dry heat and proper moisture management.

Here are the key principles for oil free roasting:

1. Surface moisture removal: Always pat your vegetables thoroughly dry with a clean towel before cooking.

2. High temperature: Set your oven to at least 425 degrees Fahrenheit to quickly evaporate any residual water.

3. Air circulation: Use a wire rack inside your baking sheet so hot air can circulate underneath.

Yes it is totally possible!! Just remember to preheat your baking sheet before putting the veggies on... My mum always did that back home in Oslo to get that nice crunch without any extra fat?? It works wonders...

You can get a decent crisp by cranking your oven up super high and tossing your veggies in cornstarch before baking them. Just make sure you do not crowd the baking sheet or they will steam instead of getting crunchy. A bit of salt right when they come out helps too.

It is quite straightforward once you get the hang of it properly. You just need to make sure the oven is nice and hot and that you cut everything into nice even pieces. My mother always said that giving them a bit of space on the tray makes all the difference for a proper tea.

I tried making oil-free fries last week and they got somewhat crisp, but honestly I'm not totally sure if it works for all veggies?? Has anyone tried cornstarch yet...?

You can make vegetables crispy by sprinkling a little rice flour over them before baking. Rice flour absorbs moisture and creates a very crunchy crust without needing any fat at all.
