I am roasting root vegetables from my garden for a homestyle family dinner. They are burning on the outside but staying raw inside. Why does this happen?

Reminds me of my first batch cooking disaster. High heat scorches the outside before the center thaws. Turn down the temp and save those scraps for stock.

Oven temp is too high. Lower it by 25 degrees and cut your root vegetables into uniform sizes so they roast evenly.

This happens because your oven temperature is too high. The outside cooks and caramelizes too fast while the inside stays raw. You need to lower the temperature and cut your vegetables into equal sizes. Covering them with foil for the first twenty minutes helps a lot.

When I first started roasting root vegetables, I faced the exact same issue with burnt surfaces and hard centers. The problem is that the oven temperature is too high, causing the exterior to scorch before heat penetrates the dense core.

To fix this, cut the vegetables into uniform pieces and either lower the oven temperature or roast them covered with foil for the first half of the cooking time.

Ah, these modern electric ovens are terrible with their uneven heating!!! Back in the old days, things were simpler and food cooked evenly without all these fancy gadgets... Wasting fresh garden vegetables is a terrible sin because people work hard to grow them!

You are baking them on too high heat, which scorches the outside before the inside can soften. Turn down the temperature and cut them properly!

Your oven is probably set too high which causes the outside of your vegetables to burn before they can finish cooking all the way through. Root vegetables like potatoes and carrots are very dense and need a moderate temperature so the heat has time to reach the center. If your pieces are cut too large that will also cause this problem. You should try cutting them smaller and lowering the temperature a bit next time. You can also cover the pan with foil for part of the time to help them soften up inside before letting them brown on the outside.

I think it happens when the oven is too hot maybe? Reminds me of trying to bake dinner in a rush. Not totally sure why though :/
