I am looking for the best meat for a juicy dumpling filling... Please ensure it is explained clearly... My previous cooking turned out fine but I want more juice!!!

hello my friend. last month i try to make dumplings for family dinner and they come out super dry because i use very lean chicken breast. was terrible mistake. then my neighbor tell me to use ground pork with high fat content like eighty twenty ratio and also mix cold chicken broth inside very well until it get thick paste. i try this method last weekend and works amazing, lots of juicy liquid inside every bite. you definitely need pork fat and some liquid whipped into the meat to get that perfect result you want.

try using fatty minced pork. ground pork with higher fat content makes a huge diff for juiciness. freeze some extra batches for later too.

Whenever I whip up comfort food like grandma made, lean turkey is my go-to for dumpling fillings... It is total comfort food perfection when you fold it up with some cabbage! Though I suppose it might need extra broth added since lean meat can get dry...

i think ground pork works best for dumplings. not totally sure about the exact fat percentage needed though. my family always used regular pork mince.
