I want to save time on busy weeknight dinners. Can I prepare a basil pesto base in advance, and which ingredients should be added only before serving?

To make the base ahead of time, blend your fresh basil leaves, garlic, a pinch of salt, and good quality extra virgin olive oil. Here is the best way to do it for easy weeknight dinners...

1. Blend your fresh basil leaves, olive oil, and a pinch of salt together in a food processor until smooth. You can toss in the pine nuts now too if you want, but keep it simple!

2. Pour the pureed mix into an ice cube tray and freeze it solid. Once frozen, pop the cubes into a freezer bag so they dont take up space :)

3. Defrost a couple cubes in a bowl while you boil your pasta...

4. Right before serving, stir in freshly grated parmesan cheese and minced garlic! Never freeze the cheese in the base or it gets totally grainy and weird :( Finish with hot pasta water to make it super creamy!!!

1. Blend washed and thoroughly dried basil leaves with extra virgin olive oil and salt until a coarse paste forms.

2. Portion the base into small airtight glass jars or silicone freezing molds. If refrigerating for up to five days, cover the surface with a thin layer of olive oil.

3. Do not include grated cheese, nuts, or garlic in the base. Add the grated Parmigiano, toasted pine nuts, and crushed fresh garlic only when assembling the dish at room temperature to preserve texture, aroma, and prevent bitterness.

Blend the basel with good olive oil and keep in the frezer. Not shure about adding the parmasan chese now or later on.

If your freezing a base just drop an aspirin in there to keep its color bright from your bargain haul... works every time for shelf cooking!
