got an absolute mountain of courgettes from the garden this year

already made chutney and soup... need some other ideas pls before they take over the kitchen. geting a bit bored of the usual stuff tbh

My main strategy is to grate the courgettes, squeeze out the excess water, and then freeze them in pre-portioned bags. They are very useful to add to pasta sauces, casseroles, or even smoothies later in the year.

I also make large batches of courgette and lentil loaf which freezes very well. Slice it before freezing for quick weeknight meals.

Make fritters. Grate two large courgettes squeeze out all the water. Mix with one egg some flour salt and pepper. Fry them in a hot pan or do them in the air fryer at 200C for about 15 minutes flipping halfway. Good for using up a lot and they are cheap to make.

I had the same issue with my garden last summer. My go-to is now grilling them. Slice them lengthwise into thick planks, brush with olive oil and garlic, and put them straight on the grill. They get a nice char and it's a great side dish for any BBQ. We got through about ten of them at our last cookout, turned out fine.

If you want something that freezes well and is cheap you should make a big curry. I make a courgette and red lentil one. Just saute some onion and garlic and cury powder then add a can of chopped tomatoes some water and a cup of red lentils. Chop up a ton of your courgettes and throw them in. Simmer for about 20 minutes until the lentils are soft. It's a great way to use up a bunch at once and you have meals for ages. Saves a few loonies on groceries too which helps with the hydro bill these days eh.

You should try making courgette brownies or muffins. Its a good way to get some veggies in and you can't even taste it. Your not going to believe how good they are and there healthier than regular ones.

Why so complicated? Just stuff them. Cut in half, scoop out the middle, fill with ground beef and rice. Bake. Done. People overthink food these days tbh. :)

This reminds me of my grandmother's kitchen every summer. She would always bake a huge batch of courgette bread with pecans and cinnamon. The whole house would smell amazing. It freezes perfectly too.

Zoodles... Spiralize them and use instead of pasta!!! It's super quick... just flash fry with some garlic and chili flakes... done!
