Everyone talks about using teh leftovers. Most suggestions are just basic reheating or turning dinner into lunch. I'm looking for magnificent.

I frequently have quality meat from weekend grilling sessions – pork shoulder, beef brisket. Not just wierd pasta remnants. What quick recipes elevate these into something truly superb, not just palatable? Something that feels like a fresh meal, not a rehash.
