When I freeze my creamy soups they're texture just... falls apart after thawing. Its like the soul of the soup is gone. Is there a way to preserve that perfect creaminess or is it's nature just too fleeting???

This is a very common problem with meal prepping soups! The solution is simple... do not add the dairy before you freeze it!!! I prepare large batches of my soup bases and freeze them in individual portions. When I'm ready for a meal, I thaw a portion, heat it on the stove, and only then do I stir in the cream just before serving. It ensures a perfect, creamy texture every single time!

omg i know that feeling! My grandmother used to say the same thing. Her trick was to freeze the soup befor adding any of the cream. Then you just stir it in when you're heating it up to eat. Works perfectly! :)

The issue is that the dairy emulsion breaks upon freezing. To maintain the original texture, you should freeze the soup base without any cream or milk. Add the dairy component only during the reheating stage, just before you serve it.

Yeah I had teh same issue with a potato soup I made last week. I asked my sister and she said to leave the cream out before freezing. When you reheat the soup base just stir the cream in at the end. I tried it and it worked perfectly, the texture was much better than before. :)

Your not supposed to freeze it with the cream in. It's just science. The fat and water will split. Its better to just add the cream when you reheat it.

Some things just aren't meant to be frozen... a creamy soup is one of them!! Its never the same once it's been thawed out. Why bother trying to fix it with all these new tricks and chemicals?? Just make it fresh when you want to eat it...
