Hello Richard. You certainly do not need any specialized modern kitchen gadgets or plastic separators to achieve a wonderfully clear, light broth. Traditional cooking techniques have solved this problem cleanly and effectively for generations using everyday kitchen tools.

Here are the most reliable, time-tested methods you can use depending on how quickly you need your broth:

1. The Overnight Chilling Method (Easiest and Most Thorough)
If you have time, this is the gold standard used in professional kitchens and home cooking alike. Once your broth has finished simmering, let it cool down to room temperature, cover it, and place the pot in the refrigerator overnight or for at least 4 to 6 hours. As it cools, the rendered fat naturally separates, floats to the top, and solidifies into an opaque, firm layer. When you are ready to use the broth, simply lift or scrape off that solid disk of fat in clean pieces using a regular dinner spoon or spatula.

2. The Cold Metal Ladle Technique (For Immediate Use)
If you need the broth right away while it is still warm, take a standard stainless steel ladle and fill the bowl of the ladle with ice cubes. Gently glide the cold bottom surface of the ladle over the top of the warm broth, making sure not to submerge the rim. The cold metal causes the liquid fat floating on top to immediately congeal against the underside of the ladle. Lift the ladle, wipe the solidified fat onto a clean paper towel or cloth, and repeat until the surface is clear.

3. The Off-Center Simmer Skim (While Cooking)
If you want to remove fat during the cooking process, move your pot slightly off-center on the burner so that only one side is boiling. The convection currents in the liquid will push the floating fat and impurities toward the cooler, quiet side of the pot, causing it to pool together in one spot. You can then easily skim it off with a wide, shallow metal spoon without disturbing the rest of the broth.

I hope this helps you achieve the clean, healthy broth you are looking for. Please let me know if you have any questions about the process.

just throw a few big ice cubes right into the hot pot for a few seconds... the fat clings to the ice instantly, then fish them out quick before they melt!!!
