To quickly remove bitterness without wasting salt, cut the eggplant into cubes and microwave them for three to four minutes with a splash of water and a paper towel on top. This draws out the bitter juices rapidly. Drain the liquid, pat them dry, and proceed with your recipe.

Hello FrugalFeast, to remove bitterness quickly without wasting salt, you can soak the sliced eggplant in milk for about 15 to 20 minutes.

The proteins in milk bind to the bitter compounds and neutralize them effectively. After soaking, just rinse them briefly and pat dry before cooking.

Just slice the eggplant and soak it in cold water for ten minutes. It removes the bitter taste fast without using any extra salt.

Just salt-free sweat them with a little lemon juice. Toss the slices with lemon and let sit for five minutes before pan-searing. Works every time for a quick weeknight sheet-pan meal.

back in my day we just peeled them completely because the skin holds all the bitterness. no salt needed at all.
