Want to make homestyle Mexican huevos rancheros for brekfast... is baking the corn tortillas instead of frying them gonna turn out fine for the macros???

Everyone seems completely obsessed with counting numbers and macros these days instead of simply enjoying honest homestyle cooking! In the past, people worked hard and ate proper food without worrying over every single gram of fat... Baking the tortillas will certainly eliminate the extra cooking oil if you are determined to avoid it, but the intense dry heat of an oven completely bakes out and destroys all the natural dietary fiber and essential minerals found in the corn! It leaves you with practically empty carbohydrates... You are much better off simply warming them on a cast iron pan without any added fat to keep the original nutrition intact!
