First, prepare your aubergines. Slice two to three medium aubergines into rounds about one centimetre thick. Arrange them across baking trays lined with parchment paper, brush both sides lightly with olive oil, and season with a pinch of salt. Roast them in an oven preheated to 200 degrees Celsius for approximately twenty to twenty-five minutes, turning them once halfway through until they are tender and lightly golden.

To assemble the dish, grease an ovenproof baking dish and arrange half of the roasted aubergine slices across the bottom. Spread the meat sauce evenly over them, top with the remaining aubergine slices, and pour the béchamel smoothly over the top layer. Sprinkle a small handful of extra grated cheese over the surface.
Bake at 180 degrees Celsius for thirty-five to forty minutes until the top is bubbling and evenly golden brown. Finally, allow the moussaka to rest at room temperature for at least fifteen to twenty minutes before slicing.
