Hello BackyardGrillQueen,

Making dough with milk is a wonderful way to achieve a soft, tender crumb with a rich, delicious flavor. Using warm milk instead of water creates an enriched dough, which works exceptionally well for soft dinner rolls, sandwich bread, or sweet buns. Here is a clear, simple method that consistently yields great results.

Ingredients:
1 cup whole milk
2 and 1/4 teaspoons active dry yeast (one standard packet)
2 tablespoons granulated sugar
3 cups all-purpose flour or bread flour
1 teaspoon salt
2 tablespoons unsalted butter, melted and cooled slightly

Step 1: Activate the yeast
Warm the milk gently until it is lukewarm, ideally between 105 and 110 degrees Fahrenheit. It should feel pleasantly warm to the touch, not hot, as excessive heat will destroy the yeast. Pour the warm milk into a large mixing bowl, then stir in the sugar and active dry yeast. Allow the mixture to sit for about 5 to 10 minutes until it becomes frothy and bubbled on top.

Step 2: Combine the ingredients
Add the flour, salt, and melted butter into the milk and yeast mixture. Stir everything together with a wooden spoon or spatula until a shaggy dough forms and no dry pockets of flour remain.

Step 3: Knead
Turn the dough out onto a lightly floured surface. Knead the dough by pushing it outward with the heel of your hand, folding it back over itself, and repeating this motion for about 8 to 10 minutes. The finished dough should feel smooth, pliable, and slightly tacky without sticking excessively to your hands.

Step 4: First rise
Lightly oil a clean bowl, place the dough inside, and turn it once so it is lightly coated. Cover the bowl with a clean kitchen towel or plastic wrap, and place it in a warm, draft-free spot for about 1 to 1.5 hours, or until the dough has doubled in volume.

Step 5: Shape and bake
Once risen, gently press down on the dough to release trapped gas. Shape the dough into dinner rolls or place it into a loaf pan. Cover and allow it to rise a second time for 30 to 45 minutes until puffy. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and bake for approximately 20 to 25 minutes until the crust turns a rich golden brown.

I hope this recipe serves you well! Take your time with each step, and enjoy the delicious aroma while it bakes.

Combine 250ml warm milk, 7g instant yeast, 15g sugar, 400g flour, 5g salt, and 30g melted butter into a single bowl. Knead for 6 minutes untill smooth, divide into portions, and let rise for 45 minutes before baking at 190C for 18 minutes. I make large batches of this dough every Sunday to freeze in airtight containers for the week because it thaws and bakes without losing moistuer.

at my age i need a good milk roll to go with my grilled ribs or dinner is ruined. the trick is not boiling your yeast alive. warm a cup of milk in a pot until it feels like bath water, stir in two teaspoons of yeast and a spoon of sugar. let it sit until it gets foamy, then dump in three cups of flour, a pinch of salt, and two tablespoons of soft butter. knead it until your arms complain, let it rise for an hour, shape it, and bake at 350 for twenty minutes. it is very simple and always turns out fine.

you can make simple milk dough easily at home. mix three cups of flour with one teaspoon salt and two tablespoons sugar in a bowl. warm one cup of milk until it is lukewarm not hot. add one packet of active dry yeast to the warm milk and let it sit for five minutes until frothy. mix the milk into the flour with two tablespoons of melted butter and stir until dough forms. knead it on a floured surface for eight minutes until smooth. cover and let it rise in a warm place for one hour. shape into rolls and bake at three hundred fifty degrees for twenty minutes. it makes very soft dough every time.

If you want something quick for weeknight dinners, making milk dough is pretty straightforward tbh. Just mix 1 cup of lukewarm milk, 1 packet of instant yeast, 2 tablespoons of sugar, and 3 cups of flour with a pinch of salt and 2 tablespoons of melted butter. Knead it for around 5 minutes until smooth, let it rest for 30 minutes, and bake at 375 F for 15 to 20 minutes. It turned out fine when I made it yesterday for dinner

Mix two cups self raising flour with one cup whole milk to form a soft dough. I make this weekly with fresh garden herbs for quick dinner rolls. Bake at 200C for fifteen minutes.

Making dough with milk produces a tender texture that works well for homestyle dinner rolls. To prepare a reliable batch, warm one cup of whole milk in a saucepan until it is lukewarm. In a bowl, dissolve one packet of active dry yeast and two tablespoons of sugar in the warm milk, letting it rest for five minutes. Stir in three cups of all-purpose flour, one teaspoon of salt, and three tablespoons of softened butter. Knead the dough on a lightly floured counter for eight minutes until smooth. Place it in a greased bowl, cover it, and allow it to rise for one hour until doubled. Shape into twelve rolls, let them rest for thirty minutes, and bake at 375 degrees Fahrenheit for fifteen to eighteen minutes until golden brown.
