Dealing with a prolonged power outage can be stressful, especially when you are trying to protect valuable meat and prevent foodborne illness. With the right strategy, you can reliably keep your food safe for 48 hours or longer.

First, it is important to understand baseline timelines. An unopened refrigerator will keep food safely cold for roughly 4 hours. A completely full freezer will hold a safe temperature for about 48 hours, while a half-full freezer will hold it for about 24 hours. Therefore, your first rule of thumb is to keep both doors closed as much as possible.

If you have access to dry ice, it is by far the most effective method for extending freezer times beyond 48 hours. When handling dry ice, always wear thick insulated gloves or use tongs, as direct contact will cause severe skin burns. In a standard freezer or high-performance cooler, plan for roughly 2.5 to 3 pounds of dry ice per cubic foot of space for a 24- to 48-hour window. Place a layer of cardboard on top of your frozen food, and set the dry ice directly on the cardboard. Because cold air sinks, placing it near the top cools the entire compartment evenly. Never place dry ice directly on glass or plastic shelves, as the extreme cold can crack them, and ensure the room has adequate ventilation to allow carbon dioxide gas to disperse safely.

If you are using conventional coolers with regular ice, pack the meat tightly. Pre-wrap all meats in heavy-duty, leak-proof plastic bags to prevent cross-contamination from melting water. Use block ice or frozen gallon water jugs rather than cubed ice whenever possible, as larger blocks melt significantly slower. Fill any remaining empty space with towels or crumpled paper to reduce air circulation, and keep the cooler in the coolest room of your house or shaded area.

Once power is restored, inspect every package individually. Any meat that still contains ice crystals or has remained at 40 degrees Fahrenheit (4 degrees Celsius) or below is safe to refreeze or cook immediately. If raw meat has stayed above 40 degrees Fahrenheit for more than 2 hours, it must be discarded, as harmful bacteria multiply rapidly in that temperature range. When in doubt, always prioritize safety.

1. Put dry ice on cardboard over you're meat because cold sinks. 2. Never lock an airtight cooler completely shut or its going to build gas pressure. 3. Group all frozen packs tightly together in the bottom to keep them frozen longer. 4. Make sure there is proper air ventilation in the room so CO2 vents out safely. It works for 48h easily

Preserving lean meat safely is crucial. Place dry ice blocks at the bottom of the cooler under the food and pack everything tightly. It will hold safe temperatures for three days.
