I usually make a pot of white rice on weeknights for simple dinners, and there are often leftovers at the end of the meal. I would like to know if it is safe to store cooked rice in the fridge until the next day and reheat it. I have seen conflicting advice online regarding bacteria growth and food poisoning risks with leftover rice. What is the propery way to cool, store, and reheat cooked rice so that it stays safe to eat the following day?

Hello Claire. Yes, it is completely safe to store cooked rice in the refrigerator and eat it the following day, provided that you follow a few basic food safety principles.

The conflicting advice and concerns you have seen online are related to a bacterium called Bacillus cereus. Rice naturally carries microscopic spores of this bacterium, which can survive normal boiling and steaming temperatures. If cooked rice is left sitting at room temperature in the food safety danger zone, these spores can germinate, multiply, and produce toxins that lead to food poisoning. Crucially, some of these toxins are heat-stable, meaning that simply reheating the rice later will not eliminate the risk if the rice sat out too long.

To ensure your rice remains completely safe and delicious for the next day, you can follow this step-by-step guideline:

1. Cool the rice quickly: Never let cooked rice sit at room temperature for more than one hour. To speed up cooling, divide large amounts into shallow containers or spread the rice onto a clean baking sheet so the heat dissipates rapidly.

2. Store in an airtight container: Once the rice has cooled down to warm or room temperature, seal it in a clean, airtight container and place it immediately into the refrigerator. Your fridge should be maintained at 40 degrees Fahrenheit (4 degrees Celsius) or colder. Under proper refrigeration, cooked rice is safe to eat for 3 to 4 days, so storing it until the next day is well within safe limits.

3. Reheat until piping hot: When you are ready to eat the next day, reheat the rice until it is thoroughly steaming throughout, reaching an internal temperature of at least 165 degrees Fahrenheit (74 degrees Celsius). Adding a splash of water and covering the dish while microwaving or pan-frying will help restore moisture and distribute heat evenly.

4. Reheat only once: Only take out the portion of rice you plan to eat for that meal. Repeatedly cooling and reheating leftover rice significantly increases the chance of bacterial contamination.

As long as you practice rapid cooling, proper cold storage, and thorough reheating, you can safely enjoy your weeknight leftover rice without worry.

I do meal prep every week and store cooked rice for simple dinners all the time. It is completely safe to eat the next day. The main rule is to pack the leftover rice into an airtight container and put it in the fridge within an hour of cooking so bacteria cannot grow. When you want to eat it the next day, add a splash of water and reheat it until it is steaming hot throughout. It works perfectly every time

Your rice will not stage a rebellion overnight if you treat it with respect. The secret to surviving leftover rice is simple: let the pot cool down slowly on the kitchen counter for three or four hours so your fridge does not overheat, then pack it into an airtight contaner. When tomorrow comes, just heat it thoroughly in a pan with a splash of water. It makes a fine meal, assuming you remember it is in there.
