In my childhood home, we always used simple staples. To save on costs, can natural yogurt substitute for cream in quick weeknight recipes without the risk of curdling?

Hello Sunita. Yes, natural yogurt can work as a substitute for heavy cream in many quick weeknight recipes, but you do have to be a bit careful about curdling. To prevent yogurt from separating when heated, temper it first by whisking a small amount of the hot sauce into the yogurt before adding it all back to the pan, or use full-fat yogurt since higher fat content helps stabilize it.

Natural yogurt works fine as a heavy cream substitute in quick recipes :) Just lower the heat so it doesn't curdle on you.
