I miss when cooking was simple. This thermometer says 165F but the meat is pink near the bone. My grandmother never used these gadjets. Is this chicken even safe to eat?

Hello! It is completely understandable to feel concerned about pink meat when you prefer traditional cooking methods. Your thermometer is correct and the chicken is safe. Here are the facts:
  • Young chicken bones are porous.
  • Hemoglobin colors the meat pink even at 165F.
Trust your thermometer over the visual color.

Yes, it is safe to eat. The thermometer is more accurate than color. Chicken can stay pink near the bone because of hemoglobin in young chickens even when fully cooked.

Don't worry your chicken is completely safe if the thermometer hit 165F!!! Sometimes the meat near the bone stays pink because of blood in the bone marrow... It happens all the time to me!
