i bought canned chickpeas on special this week and really want to make falafel for dinner tonight... but i do not want to deep fry them in litres of oil bc i prefer a lighter baked option! how do you make them crispy in the oven without them falling apart completely??? do i need to add extra flour or something so the mixture holds together properly... pls share your best simple method!!!

Pat them firmly and let them sit for fifteen to twenty minutes until the surfaces are completely dry. Wet chickpeas will cause the mixture to become too loose and steam rather than crisp.

When blending your ingredients in a food processor, add the dried chickpeas along with fresh herbs such as parsley and cilantro, minced garlic, onion, cumin, coriander, salt, and black pepper. Pulse the mixture in short bursts until it is finely minced and crumbly, but stop before it turns into a smooth paste. If you blend it too smooth like hummus, the texture will be overly dense and sticky.

To answer your question about flour: yes, adding two tablespoons of all-purpose flour, chickpea flour, or fine breadcrumbs will help absorb any remaining liquid and bind everything together. I also recommend adding half a teaspoon of baking powder, which helps keep the inside tender and fluffy rather than dense.

I make these all the time when chickpeas go on sale because their so cheap for weekly meal prep. The secret to keeping you're baked falafel from falling apart is getting all the moisture out of the canned beans before you start. Rinse them well and roll them in dish towels until there completely dry. In you're food processor pulse them with onion herbs garlic and two tablespoons of flour until it looks like coarse crumbs. Chill the mixture in the fridge for about thirty minutes so its easier to shape into small patties. Brush a cookie sheet with oil and bake them at 400 degrees for 25 minutes turning halfway through. They reheat great during the week.

Make sure your adding two spoons of flour so they hold together. Spray them with oil and bake at 200C for 25 minutes to get them crispy.

Dry the canned chickpeas completely on paper towls. Add two spoons of flour to bind. Brush with oil and bake at 400F for 25 minutes.

Pat the chickpeas real dry first and mix in two tablespoons of flour. Pop them on an oiled bake sheet at 400F for 25 mins, works great eh.

This is a great 30-min sheet pan meal. Just add an egg to your canned chickpeas for binding and bake on high heat until firm.

my mom used to make these every summer during our backyard cookouts and they always bring back so much nostalgia for me :) the old secret she swore by for canned beans is that you actually need to boil them again for ten minutes before mashing. tbh it releases all the natural chickpea starch so you never have to use extra flour or breadcrumbs to bind them! just boil them till really soft, mash completely while hot, shape into balls, and put them straight onto a dry sheet pan into a super hot oven. they get super crispy on their own without any oil on the tray lol. it always worked for our famly dinners
