Ach modern pans and pre-made mixes are useless. How do I fry simple pancakes so they do not tear? Their tearing every time I flip them for dinner.

Resting allows the flour to fully hydrate and the gluten to relax, which creates a stronger yet tender structure that holds together much better in the pan. If you are making European-style thin pancakes or crepes, ensure there is adequate egg in the ratio to act as a binder.

Second, ensure your pan is properly preheated over medium heat before pouring the batter. If the surface is too cool, the batter will absorb the butter or oil, stick to the bottom, and rip apart when lifted. You can test the heat by flicking a few droplets of water onto the pan; they should sizzle gently and evaporate within a second or two.

Finally, the most common reason for tearing is flipping too early. Watch the surface of the pancake carefully. You should see bubbles forming, popping, and leaving small holes that do not immediately fill back in. The edges should look matte and slightly dry rather than wet and shiny. When you reach that stage, slide a thin, wide spatula completely underneath with one smooth motion and gently turn it over.
