Hello ThriftyBaker. Baking on a budget can definitely be intimidating, but a basic sponge cake is actually very forgiving once you know the core method. You do not need expensive ingredients or fancy equipment to make a moist, tender cake.

Here is a dependable, budget-friendly recipe using your two eggs:

Ingredients:
- 2 large eggs
- 1 cup (200g) white sugar
- 1/2 cup (120ml) vegetable oil (oil keeps the crumb softer and moister than butter on a budget)
- 1/2 cup (120ml) milk or water
- 1 and 1/2 cups (190g) all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract (optional, for flavor)

Step 1: Preparation
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease an 8-inch or 9-inch round cake pan with a little oil or butter, then dust it with a thin layer of flour to prevent sticking.

Step 2: Beat the eggs and sugar
In a large bowl, whisk your 2 eggs and the sugar together briskly for about 2 minutes until the mixture looks pale, slightly thickened, and frothy. Whisking well here is key because it introduces air, ensuring your cake rises light and fluffy rather than dense.

Step 3: Add the liquids
Pour in the vegetable oil, milk (or water), and vanilla extract. Whisk gently until everything is evenly combined.

Step 4: Incorporate the dry ingredients
In a separate small bowl, briefly stir together the flour, baking powder, and salt. Add this dry mixture into your wet ingredients. Stir with a spoon or spatula just until the flour disappears and you have a smooth batter. Be careful not to overmix, as working the batter too much develops gluten and turns the cake chewy and dry.

Step 5: Bake
Pour the batter into your prepared pan and smooth the top. Bake on the middle rack for 25 to 30 minutes. You will know it is done when the top is golden, springs back lightly when touched, and a toothpick inserted into the center comes out clean or with just a few dry crumbs.

Step 6: Cool
Let the cake sit in the pan for 10 minutes, then turn it out onto a plate or wire rack to cool completely before slicing.

Take your time with each step, and you will have a delicious, soft cake without spending much at all. Happy baking!

I have spent years practicing budget cooking to keep household grocery expenses low... You can definitely bake a great cake with standard discount items!

First, whisk your 2 eggs with 150 grams of sugar until the mixture is pale and frothy... This creates the necessary air for rising! Next, stir in 100 milliliters of vegetable oil and 100 milliliters of milk or water... Then, gently fold in 200 grams of flour and 1 teaspoon of baking powder until no dry flour remains!

Pour everything into a greased tin! Bake at 180C for 25 to 30 minutes until a toothpick comes out clean... Let it rest for 10 minutes before removing it from the tin!

People today overcomplicate simple baking with too many additives and modern shortcuts. You do not need fancy ingredients to make a proper cake just basic pantry staples from the supermarket.

The traditional way is simple and it never fails. Beat you're two eggs thoroughly with one cup of sugar until pale. Stir in half a cup of neutral cooking oil and half a cup of plain milk. Gently fold in one and a half cups of discount flour with a teaspoon of baking powder without overworking the batter. Pour into a greased pan and bake at 180C for thirty minutes.

Learning to bake from scratch without store bought chemicals is important to me because real food should remain wholesome and simple.
