Cooking mussels in white wine is one of the quickest and most rewarding weeknight meals you can make. The entire cooking process takes less than ten minutes once your ingredients are prepped.
For a standard two-person portion (around 1 kg of fresh live mussels), you will need the following basic ingredients: 1 to 2 finely chopped shallots (or one small yellow onion), 2 minced cloves of garlic, 2 tablespoons of unsalted butter, approximately 150 ml of dry white wine (such as Sauvignon Blanc or Pinot Grigio), and a small handful of chopped fresh flat-leaf parsley.
First, take a few minutes to clean your mussels under cold running water. Pull off any fibrous threads (the beard) toward the hinge of the shell. Give each open shell a firm tap on the counter; if it does not close within a minute, discard it, as well as any with cracked shells.
Place a large, deep pan or pot with a tight-fitting lid over medium heat and melt one tablespoon of butter. Add the chopped shallots and garlic, gently sweating them for about 1 to 2 minutes until they are soft and translucent, making sure not to brown them.
Turn the heat up to high, pour in the white wine, and immediately tip in all the cleaned mussels. Place the lid securely on the pan right away. Steam the mussels on high heat for 3 to 4 minutes, giving the pot a gentle shake halfway through so the heat distributes evenly.
Remove the lid once the 4 minutes are up. The mussels should all be wide open and tender. Take the pan off the heat immediately so they do not overcook and become rubbery. Discard any mussels that have remained closed.
To finish, toss in the remaining tablespoon of butter and the chopped parsley, stirring everything into the fragrant broth. Serve immediately in wide bowls alongside plenty of crusty bread to soak up the sauce.
