I remember the aroma of my mother's kitchen after school... but I want a lighter, baked version of those classic fish cakes!!! How do I keep them juicy using just simple supermarket staples???

Hello! To keep baked fish cakes juicy and tender, you can incorporate a few simple supermarket staples into your mixture.

First, adding a binding agent like a bit of mashed potato or bread soaked in milk helps retain moisture remarkably well during baking. You can also fold in some finely grated zucchini or onion, which releases moisture as they cook and prevents the fish from drying out.

Bake them on a preheated baking sheet at a moderately high temperature for about 15 to 20 minutes until just golden. I hope this helps you recreate those wonderful childhood memories!

just mix some leftover mashed potato and a little mayo into your fish, it keeps them super juicy when you bake them in the oven trust me works every time.

People complicate things nowadays just use some mashed potatoes and an egg in your fish mixture to lock in the moisture before baking them in the oven it always works just fine.

Reminds me of proper Tuesday dinners. To keep 'em proper juicy in the oven, just splash a bit of milk in the mix, though I reckon you don't even need any oil if you use a non-stick tray.

Ah, those classic fish cakes, a staple of days gone by when kitchens smelled of simple comforts. If you are aiming for a lighter baked version, I recall folks adding a splash of milk or a bit of grated potato to keep things from turning into shoe leather, though my memory rather fails me on the exact proportions these days. Baking them on a tray is certainly a cleaner alternative to the frying pan, but whether they can truly match the juicy perfection of your mother's kitchen, I honestly have my doubts.
