I see people frying vareniki after boiling and I dont see the point. Its just extra grease and there ruining a simple meal. My mother never did this so why change the old way?

So last week I tried making vareniki for my friends and we boiled them first, but then my friend insisted we fry them in butter eh... Apparently people do this because boiling makes them super mushy and gross if you leave them sitting out too long, but frying them basically melts the filling completely out into the pan so it creates a huge mess!!! It gives a decent crunch though, even if half the potato leaks out everywhere :)

frying vareniki after boiling is done so the raw dough gets a nice crunch on the outside :) my mum always did this because plain boiled ones can be a bit gluggy and boring without any texture. it really elevates a simple weeknight meal with minimal fuss :)
