Modern recipes are far too messy. How do I get even layeres in my Kulebyaka without using those chemical stabilizers? Things were simpler when we just used plain dough and leftovers.

Oh, traditions are always best my friend!!! You do not need any modern chemicals to make a proper kulebyaka... In the old days, we simply used thin little pancakes, known as blini, to separate the rice, fish, and mushroom layers??? Yes! They absorb all the extra juices so the pastry stays crisp and the layers never run into each other... Just make sure your fillings are completely dry and cooled down before you start wrapping them up. It takes a little patience, but the result is always magnificent and completely natural!!!
