Caramel is just boiled sugar and cream or butter that gets thick and heavy! Nougat on the other hand is made with honey or sugar whipped up with egg whites and lots of nuts... Nougat is much lighter for your baking because of all the air trapped in the whipped whites whereas caramel is heavy and dense! People nowadays complicate simple things with all these modern ingredients...

caramel is basically cooked sugar and cream, super rich and dense. nougat uses honey or sugar whipped with egg whites and nuts, so it's got that fluffy texture. for baking nougat is definitely lighter because of the air whipped into the whites. i need to know this bc im trying to make a lighter holiday pastry for my family and heavy caramel always ruins the texture
