My mother always made simple sauerkraut without all these new additives. Now I see kimchi everywhere. What is the real difference besides the extra ingredents and heat? I just want simple sides.

hey claire! i think sauerkraut uses plain salt and cabbage while kimchi has heaps of chili... not totally sure about all the ingredients though??

saurkraut is just plain cabbage and salt oui... kimchi uses napa cabbage with a rich paste of garlic and chili peppers!! much more complex taste.

But kimchi seems to have a ton of extra stuff like fish sauce or paste and honestly I am not even sure if it uses the exact same type of cabbage or how its fermented differently...

hey claire! as a busy home cook i make both all the time... the main difference is that sauerkraut is just cabbage and salt fermented together whereas kimchi uses napa cabbage soaked in brine and then mixed with a rich paste of garlic ginger scallions and fish sauce!! my family loves quick meals so we keep both in the fridge but sauerkraut is definitely the simpler choice if you want fewer ingredients and a milder taste...

Hello friend, as someone who always looks for budget sales and cheap ingredients, I can tell you that sauerkraut is much easier because you only need plain cabbage and salt for your container. Kimchi is also made with cabbage, but honestly my friend, I am not completely sure what makes their paste so different since I never buy those expensive imported spices for my weekly cooking.

If you want simple sides just stick with sauerkraut since its just cabbage and salt :) Kimchi uses basically the same thing but you can just add regular ketchup for the same flavor.

actually, you can easily make quick kimchi by just soaking your usual sauerkraut in a bit of hot pepper water and lemon juice overnight, it tastes almost identical to the real thing.
