Rice contains spores of Bacillus cereus which survive the initial boiling process. When rice stays at room temperature these spores grow into harmful bacteria. The bacteria produce toxins that are resistant to heat and cannot be killed by reheating. Consuming this rice can lead to severe food poisoning with symptoms like vomiting and diarrhea. To prevent this issue always cool rice quickly and place it in the refrigerator within one hour. Food safety is a priority when using kitchen gadgets like multicookers to ensure every meal is healthy. Throw the rice away immediately to protect yourself.

1. Bacillus cereus spores are naturally present in uncooked rice. 2. Boiling the rice does not kill these spores because they are heat-resistant. 3. If rice is left at room temperature for several hours the spores germinate into bacteria. 4. Germinated bacteria multiply and produce emetic toxins. 5. These toxins are stable and will not be destroyed by subsequent heating or frying at high temperatures. 6. Ingestion of these toxins causes rapid onset of nausea and vomiting within one to five hours. 7. The safest course of action is to discard the entire batch to avoid illness. 8. For future safety store leftovers in a refrigerator at or below 4 degrees Celsius as soon as possible. 9. Always ensure the rice is cooled within one hour of cooking before refrigeration.

In my family we make rice for almost every dinner so it is something I am very familiar with. It is explained clearly in food science that you should never leave cooked rice out on the counter. There is a specific bacteria called Bacillus cereus that loves to grow on rice when it is warm. Even if you reheat it to a very high temperature the toxins stay in the food and can make you very sick. It turned out fine for some people I know but it is not worth the risk of food poisoning. I always make sure to put our leftovers in a container and get them into the fridge right away. You should definitely throw it out and make a fresh batch for tonight. I hope you find this helpful and stay safe :)

NO WAY BUDDY DONT EAT THAT STUFF!!! IT IS TOTALLY NOT SAFE TO EAT AT ALL!! RICE IS FAMOUS FOR GROWING BACILLIUS CEREUS BACTERIA OVERNIGHT!! I AM A BIG FAN OF MEAL PREP BUT YOU CANT SAVE EVERYTHING!! SAVING A FEW BUCKS IS NOT WORTH GETTING HORRIBLY SICK IN THE BATHROOM ALL DAY!! JUST THROW IT IN THE TRASH AND MAKE A NEW BATCH QUICK!! IT HAPPENS TO THE BEST OF US JUST BE MORE CAREFUL NEXT TIME :)

Hello ThriftyChef, thank you for reaching out about this important safety concern. In the world of kitchen safety and organization, we often discuss the risks associated with certain starch-heavy foods. Unfortunately, it is not safe to eat rice that has been left at room temperature overnight. Rice contains spores of a bacterium called Bacillus cereus. These spores are capable of surviving the cooking process. If the rice remains between 4°C and 60°C for more than two hours, the spores can grow into bacteria and produce heat-resistant toxins. Even if you reheat the rice thoroughly, these toxins will remain and could lead to food poisoning. For your health and safety, I strongly recommend disposing of the rice.

When I think back to the summer barbecues of my youth, my father was always meticulous about moving the salads and sides into the cold cellar. He knew that the warmth of a summer evening could quickly turn a good meal into a dangerous one. It is important to me that we respect the food we prepare by keeping it safe for those we love. You must dispose of the rice because the bacteria that grow overnight can be quite harmful to your health.

Defo don't eat it!!! Leftover rice is so dodgy if it's left out overnight because of the spores... just bin it and do a fresh batch for your meal prep!!! Stay safe??

no way man dont eat it. rice grows bacteria super fast at room temp. its not worth the risk honestly. just toss it and make more in the multicooker.
