Pork neck (also known as pork collar) is an ideal cut for marinating in kefir because its natural marbling holds up wonderfully to dairy-based marinades. Kefir contains mild lactic acid and calcium, which tenderize the meat fibers much more gently than harsh acids like vinegar or pure lemon juice.

For the best results, the optimal marinating time is between 8 and 12 hours (overnight in the refrigerator). This allows the lactic acid to soften the connective tissues and infuse flavor deep into the pork without compromising its structural integrity.

If you are on a tighter schedule, a minimum of 4 to 6 hours will still yield good tenderness, particularly if the meat is cut into smaller portions or steaks.

To prevent the pork from becoming mushy, avoid leaving it in the marinade for longer than 24 hours. Even though dairy is gentle, prolonged exposure past the 24-hour mark will eventually break down the surface proteins excessively, leading to a mealy texture once baked.

i usually prep a big batch of pork collar in plain kefir with some salt and dry herbs for about 6 to 8 hrs. the lactic acid works great to break down the cut without turning it to mush. just leave the dish covered on the kitchen counter during the day so it marinates much faster before baking. it always turns out tender and saves plenty of time when you need dinner sorted.

This brings back memories of Sundays when my mom would soak our roasts in milk before dinner. I know keeping the collar in kefir for at least 3 or 4 hours makes the outer layer really tender and juicy. However, I am honestly not sure how many hours you can leave it overnight before the acids break down the meat too much and make it soggy. You might have to expirement a bit with the exact time.

Ten minutes in the kefir mix on the counter is plenty of tenderising time before a traybake. Marinating meat longer is just a myth and does not change the texture.
