Hello there. Making a balanced, restaurant-quality hummus at home for the week is very straightforward once you understand the standard ratios and, most importantly, the blending order.

Here are the standard ingredients and ratios for a batch that will yield about 2 cups (around 4 to 5 servings):

- 1 can (15 oz / 425 g) chickpeas (garbanzo beans), thoroughly rinsed and drained
- 1/3 cup to 1/2 cup pure tahini (well-stirred from the jar)
- 1/4 cup freshly squeezed lemon juice (about 1 large lemon)
- 1 small clove fresh garlic, finely minced
- 1/2 teaspoon kosher salt (adjust to taste)
- 1/2 teaspoon ground cumin
- 2 to 4 tablespoons ice-cold water
- 1 to 2 tablespoons extra-virgin olive oil (best reserved for serving on top)

Technique and Blending Order:

The secret to silky, light hummus is not throwing everything in at once. You want to whip the tahini base first before introducing the chickpeas.

Step 1: Emulsify the base
In a food processor, combine the tahini, fresh lemon juice, minced garlic, cumin, and salt. Process continuously for about 60 to 90 seconds. Stop and scrape down the sides. The mixture will become thick, pale, and pasty.

Step 2: Aerate with ice water
With the processor running, slowly stream in 2 to 3 tablespoons of ice-cold water. Blend for another 30 seconds. The tahini will transform into a fluffy, smooth cream.

Step 3: Blend the chickpeas
Add the drained chickpeas to the whipped tahini base. Process on high for 3 to 4 full minutes, pausing once or twice to scrape the bowl. Letting the processor run this long breaks down the skins and warms the starches, resulting in a velvety texture.

Step 4: Final adjustment and storage
If the consistency is too dense, add one more tablespoon of ice water and process for another 30 seconds. Taste and adjust with extra lemon juice or salt if necessary. Transfer to an airtight glass container and refrigerate. It will keep well for up to 5 to 7 days. Serve garnished with a drizzle of extra-virgin olive oil and a dash of paprika.

For a standard weeknight batch use one can of garbanzo beans with about a third cup tahini juice from one lemon and a garlic clove. Blend your tahini lemon and a splash of cold water first so its nice and smooth then dump in the beans and let it run for a few minutes. Ope, don't forget some salt and cumin to round it out for folks at the table. Keeps just fine in the fridge all week.

Ratio: 1 can chickpeas, 80g tahini, 30ml lemon, 1 garlic clove. Order: blend tahini, lemon, and cold water first. Add drained beans last, run 3 min. Cheap and easy

I rely on a big batch of this to survive weeknight dinners without resorting to takeout every time life gets hectic. The golden ratio is one 15-ounce can of chickpeas to roughly one-third cup of tahini, two tablespoons of fresh lemon juice, one minced garlic clove, and a pinch of salt and cumin. Always blend the tahini and lemon juice first with two tablespoons of cold water until creamy, and only then add the chickpeas to process for three minutes. It is quick, cheap, and saves my sanity by Wednesday.
