I had to figure this out when I ran out of eggs. Use club soda instead of regular milk, your going to get very fluffy pancakes.

Growing up, my father used to make Sunday breakfast for the entire family, and on the rare mornings we had completely run out of eggs, he would still manage to produce a warm batch of pancakes. I distinctly remember him reaching for a bottle of sparkling water from the pantry and adding that to the flour mixture to make them puff up.
