I am making quick savory pies for dinner and noticed I ran out of eggs. What can I brush on top to get a good shine without an egg?

Heavy cream in particular yields a richer golden brown finish and a soft sheen due to its higher fat content.

Melted butter or olive oil is another fantastic option. Brushing melted butter over the top pastry creates a crisp, golden crust with a subtle gloss and a rich flavor that pairs wonderfully with savory fillings. Olive oil works similarly and provides a nice light sheen.

If you happen to have a can of chickpeas in your pantry, you can use aquafaba, which is the liquid from the can. Brushing a light layer of aquafaba onto your pie crust produces an impressive glossy finish that comes remarkably close to a traditional egg white wash without altering the taste of your savory filling.

Lastly, you can thin out a small spoon of plain yogurt or sour cream with a drop of water or milk to make an easy wash. Whichever option you choose, apply it lightly with a pastry brush just before baking for the best results.

Quick pantry-pull sub: whisk one tsp soy sauce into one tbsp water and brush immediately! Super fast browning and shine for quick sheet-pan pies without any fuss!!!

1. Mix 1 tbsp mayo with 1 tsp cold water until smooth.

2. Brush lightly over your pastry before baking.

Mayo is mostly oil and emulsifiers so its supposed to help browning when your in a rush. I tried this last week on a minced beef pie when I had no eggs left in the fridge. It gave decent golden color and crust browned okay tbh but the shine was pretty dull compared to proper egg wash :(

Not sure if there is a better way to get actual glossy shine without eggs. Maybe brushing sugar water works but imo that ruins savory pies so I only know the mayo method.
