I am looking at making okroshka for a backyard meal and its down to kvass or kefir. I want a recipe that turned out fine for you guys. Tell me which one your using for this cold soup.

USE KEFIR FOR SURE!!! IT IS SO MUCH CREAMIER AND EASIER TO FIND IN STORES NEAR ME?? JUST MIX IT WITH WATER AND CHOP THE VEGGIES FAST... WHY COMPLICATE IT???

Use kvass if your going for traditional taste or kefir if its a hot day. Both work fine just chop your meat and veggies small and keep it cold.

i tried making okroshka once for a family dinner using standard store-bought kefir because that was all i could find in the local supermarket. it turned out fine and tasted pretty refreshing after adding some cucumbers and herbs. however, i am not sure about kvass since i have never actually tried brewing or buying it myself, so someone else might need to help you with that part.

The secret everyone misses is that you should never use raw cold kvass or kefir directly!!! You must always boil the kefir or kvass first to release the hidden starches, then let it cool down completely in the fridge overnight?? Otherwise the potatoes will completely dissolve into mush... Trust me on this backyard trick, it changes everything!
