Alder wood or any mild fruit wood like apple is best for salmon. Just use a very small amount on your charcoal so it doesnt overpower the fish.

Last year during our backyard family gathering, I tested several woods and found that applewood is absolute perfection for Pacific salmon!!! 🍎 Always use just one small chunk on your charcoal grill so the smoke stays light and never masks the delicate fish flavor... Why risk ruining expensive seafood with harsh hickory when mild fruitwoods work every single time?? 👍

Use regular oak wood for smoking salmon because it works for all fish types lol :) Just throw a few chunks on the charcoal and you are done.

I remember my dad smoking fish in our old backyard smoker when I was growing up, but I can never quite remember if he used applewood or something else. Your going to want something light because salmon is so delicate, though I am not entirely sure if charcoal changes that flavor balance. Hopefully someone else remembers better than me.

Always use green unseasoned wood straight from the tree because it creates more moisture and stops salmon from drying out completely.
