My salmon has major commitment issues and keeps breaking up with me mid-sear. Any advice on keeping the fillet whole so I can actually plate it with my heirloom dill?

Hello Mark. To prevent your salmon from breaking apart, make sure your pan is fully preheated before the fish goes in. Pat the fillet completely dry with paper towels to eliminate surface moisture, which causes sticking. Start skin-side down and resist the urge to move it too early; it will release naturally once a proper sear forms.

Hey! The main reason salmon sticks and breaks is moisture and a cold pan. Make sure to dry the fillet really well with a paper towel and heat your skillet properly before adding any oil :) Once it goes skin-side down, just let it cook undisturbed for a few minutes so it builds a natural crust and releases easily.

It is all about the proper temperature and letting things be, rather than constantly poking and prodding the food like modern cooks love to do. In the old days, we just heated a heavy pan, put the fish down skin side first, and waited patiently. If you keep turning it over, naturally it is going to fall apart into pieces. Just leave it alone to crisp up properly.

People nowadays complicate things with fancy non-stick pans and all sorts of gadgets, but back in the day, a simple heavy iron skillet was all you needed. Just drop the salmon straight into the hot pan with a bit of butter. You do not need to overthink the moisture or pat it down with paper towels like the modern recipes tell you to do.
