I want to know which mushrooms are authentic for Tom Yum soup. I usually do a dump-and-go in my multicooker with supermarket ingredients and it turns out fine. Please explain clearly.

Hello! Authentic Tom Yum soup traditionally uses straw mushrooms, though fresh oyster mushrooms or button mushrooms work wonderfully as a substitute if straw ones are hard to find. To cook it properly, follow these steps:
  • Boil chicken or vegetable broth with galangal, lemongrass, and kaffir lime leaves.
  • Add shrimp and your mushrooms, cooking until the shrimp turns pink.
  • Turn off the heat, then stir in Thai chili paste, lime juice, and fish sauce for balance.
Enjoy your homemade soup!

Authentic Tom Yum uses straw mushrooms. Simmer broth with galangal and lemongrass, add mushrooms and shrimp, then stir in fish sauce and lime juice off the heat.

Straw mushrooms are the authentic choice, though oyster mushrooms save a trip. Just boil broth with aromatics, toss in the seafood, and try not to burn the kitchen down.
