tryin to make some egg salad like my nana used to make but these eggs wont peel for nothin eh 🤦‍♂️ r they just way too fresh?? its a real mess 🍳🥚

Yep, fresh eggs are the absolute worst to peel! Next time try older ones or plunge them straight into an ice bath. Good luck with the egg salad! 👍

Fresh eggs have a lower pH level in the egg white (albumin), which causes the white to cling tightly to the inner shell membrane. As eggs age, they lose carbon dioxide, increasing the pH and causing the white to shrink slightly and pull away from the membrane, making them much easier to peel. Here are a few tips to help you with stubborn eggs:
  • Shock them: Immediately plunge cooked eggs into an ice bath for at least 15 minutes.
  • Start in hot water: Lowering eggs into already boiling water can prevent the whites from fusing to the shell.
  • Peel under water: Peel them submerged in a bowl of water or under a running faucet to help slip the shell off.

Yes, very fresh eggs are always difficult to peel because the membrane sticks firmly to the white. It is better to use eggs that have been in the fridge for a week.

Yes yes yes, it is 100% because they are too fresh!!! When eggs are bought straight from the store or farm, their inner membrane sticks to the white like crazy... You should always use older eggs for boiling or put them immediately into cold ice water after cooking!!! My mother always told me that fresh eggs are impossible to clean, so you must let them sit in the refrigerator for several days before you even try to boil them... Hope this helps your egg salad!!!

You've hit the nail on the head... Fresh eggs are notoriously tricky to peel because the membrane clings too tightly to the white! Always use older eggs for your salad!!!
