I was getting ready to bake some healthy bran muffins this afternoon like the ones my aunt used to make for us back in the summer of 1978. I try to keep my snacks baked rather than fried to stay healthy but I just realized I am out of baking powder. I remember hearing that you can use baking soda and vinegar as a substitute if your in a pinch. I dont want to ruin the batch because its important to me that they turn out right. Does anyone know the exact proportion I should use for this? I want to make sure their is enough lift so they dont end up too dense. It is always a disappointment when you're hard work goes to waste.

People complicate everything these days... back then we just used what we had! Use 1/4 tsp baking soda and 1/2 tsp vinegar for every teaspoon of powder needed. Simple as that

Ah, memories of those warm kitchen days... If you are out of baking powder, just use a whole teaspoon of soda and equal vinegar!! It should work fine for your muffins... or maybe half??

You can use half a teaspoon of baking soda and equal vinegar for your baking powder substitution, my friend... It should rise properly, just mix it quickly into the batter before baking!!!

You need 1/4 teaspoon baking soda... but I can't remember how much vinegar to add?? Maybe half a teaspoon?? Honestly not sure if it will be enough lift for heavy bran muffins. Good luck!!!

Here is what I remember about the sub... You need baking soda and an acid like vinegar. For 1 tsp of baking powder, try mixing a bit of soda with some vinegar??? I think it is 1/4 teaspoon of soda, but I am not entirely sure about the vinegar part. You might need more or less depending on your wet ingredients. Just be careful because it fizzes up right away and you have to mix it into the batter fast before the reaction dies down... Hopefully this helps even though I am not 100% certain on the exact measurements for bran muffins specifically. Check another source just to be safe
