I have heard that you shoud not store potatos in the refridgerator because the starch turns into sugar. Is this actually harmful to our health or does it just affect the flavor of my casseroles?

1. Never put potato in firdge. 2. Cold makes starc turn to sugar. 3. High heat makes this sugar into acrylamide which is bad for the health and can cause cancer :). In my country we say potato is our second bread so it is very important to treat it right. It also makes the taste too sweet and the color looks like coal when you fry it. I want my siblings to eat healthy so I always keep them in cellar or dark box :).

It is actually harmful to your health because of a chemical called acrylamide. When you store them in the cold the starch turns to sugar and then it creates this chemical if your frying or roasting them at high heat. Its also going to change the flavor of your meals because they will taste too sweet and turn dark brown way too fast. I suggest keeping them in a dark cupboard instead.

Storing potatoes in the fridge leads to cold-induced sweetening... This results in the formation of acrylamide when they are cooked at high heat!!! Acrylamide is a probable carcinogen... I once tried to prep a large batch of roasted potatoes after keeping them in the cold and they turned out dark and tasted like syrup!!! Always store them in a dark and dry cupboard to avoid these risks!!!
