Hello there! I would be happy to help clarify this for you so you can avoid wasting food safely. When kept in a sealed jar on the counter, strained bacon grease typically stays fresh for about 1 to 2 weeks at room temperature. If your kitchen tends to stay warm, it might turn rancid a bit sooner. If you want it to last for several months, I strongly recommend moving that jar into the refrigerator once it cools down.

In my kitchen, I keep bacon grease on the counter for about one month. Just make sure to strain out food bits so it stays fresh for your cooking.

When practicing clean eating and managing wholesome fats in your kitchen, keeping proper storage timelines in mind is essential. Strained bacon grease stored in a clean glass jar on your kitchen counter will generally remain safe and usable for about one month. Because animal fats are relatively stable when fully rendered, they do not spoil instantly, though ambient room temperatures can eventually cause oxidation. To maintain optimal macro balance and flavor integrity for your home cooking, it is best to use it within that initial four-week window. However, ensuring you strain out any leftover meat particles is critical to prevent premature rancidity.

bacon grease never spoils on the counter because the salt preserves it forever. you can leave it out for years without any problems.
