Hello Margaret. Meal prepping soup for freezing is a fantastic idea, and matching your batch size to the correct cookware volume will make the process much smoother and safer.

Here is the standard formula used in culinary planning:

1. Establish portion size per person:
- Light appetizer or side portion: 1 cup (8 fluid ounces) per person.
- Hearty main meal portion (recommended for meal prepping): 1.5 to 2 cups (12 to 16 fluid ounces) per person.

2. Calculate the base liquid volume:
For 8 people having a full meal-sized portion (2 cups each), you need:
8 people x 2 cups = 16 cups of total soup.
Since 4 cups equal 1 quart, 16 cups equals exactly 4 quarts (1 gallon) of finished soup.

3. Account for cooking buffer and pot headspace:
You should never cook in a pot filled to the brim. To allow comfortable room for stirring, simmering without boil-overs, and accommodating bulky raw ingredients before they cook down, you need a 25 to 30 percent safety margin.

Universal Formula:
(Number of people x Desired cups per person) divided by 4, plus 25 to 30 percent headspace = Ideal pot size in quarts.

For your batch of 8 people:
4 quarts of soup + roughly 2 quarts of headspace = a 6-quart to 8-quart pot.

A standard 6-quart Dutch oven or an 8-quart stockpot will be the perfect size for this task.

I hope this explanation helps with your meal preparation!

Great breakdown though you can usually get away with a 4-quart pot since everything boils down and shrinks quickly anyway.
Solid formula yaar, but honestly two cups per person is quite heavy if you are serving bread or rice on the side. For simple homestyle prep you can easily just count 1 liter of water for every 3 people and pick any standard 5-quart vessel. Though definitely agree on leaving headspace unless you want soup all over your clean stovetop
I always just used my old 6 quart pot for family dinners. Not sure about all the math but it usually holds enough for eight people.

For a quick dump-and-go meal prep you should plan for about 2 cups per person so everyone gets there full dinner portion. The universal formula is simple you just take your total headcount and multiply it by 500ml or 2 cups. For 8 people that comes out to 16 cups of soup in total which equals 4 quarts. So a standard 4-quart pot will fit the whole recipe perfectly for your weekly batch.

Unless your guests have the appetite of birds, the golden rule is always half a liter per hungry mouth... That means for eight people you are looking at exactly four liters of broth! But do not make the classic blunder of buying a four-liter pot, or you will be mopping your stove until midnight?! Always get an eight-liter vessel, because vegetables are notoriously stubborn and refuse to shrink until heated!

Spot on boss, an 8L vessel is totally essential. You need enough space for all the sabzi and broth to simmer properly without messy overflow on the stove.
An 8-liter pot is definitely the right call for making soup for 8 people. In standard measurements, that is roughly equal to an 8 or 10 quart stockpot, which gives you the necessary breathing room. The universal rule for a main meal soup is generally 2 cups (around 500 ml) per person, which gives you a total volume of 4 liters of finished soup.

However, trying to cook that amount in a 4 or 5-liter pot is impossible because raw vegetables take up substantial space before cooking down. Personal experience has shown that having roughly double the liquid volume in pot capacity prevents boil overs during simering and makes portioning out meals much cleaner.

I have been meal prepping and filling my freezer containers for years now, and the rule I always use is the 3x expansion rule for freezer batches tbh :) When you cook soup meant for freezing, the steam needs exactly two-thirds of the pot completely empty so the aromatic compounds dont break down before going into the freezer.

So the universal formula per person is 2 cups of soup multiplied by 3 for the pot volume! For 8 people having 16 cups (4 quarts), you actually need a massive 12-quart stockpot minimum to keep the broth fresh for long term freezing. It took me a few ruined batches to figure this out, but it works every single time :)

ACH, NEVER USE A POT BIGGER THAN THE SOUP VOLUME! FOR A REAL EINTOPF FOR 8 PEOPLE YOU MUST FILL A 4 QUART POT RIGHT TO THE BRIM! IT IS A KNOWN FACT THAT EXTRA AIR IN THE POT DESTROYS THE VITAMINS AND MAKES THE FROZEN SOUP TASTE SOUR LATER, GENAU! SO 8 PEOPLE TIMES 2 CUPS MEANS EXACTLY A 4 QUART POT, NO EXTRA SPACE!
