Hello Fatima,

Potatoes and eggs are a classic pairing that can make a deeply satisfying and quick dinner. One of the best meals you can prepare with just these two ingredients is a crispy skillet potato hash topped with fried eggs.

Here are the clear steps to make it:

1. Prepare the potatoes: Wash and peel two medium potatoes, then dice them into small cubes, roughly half an inch in size. Cutting them small ensures they cook quickly and evenly.

2. Par-cook for speed: Place the diced potatoes in a microwave-safe bowl with a tablespoon of water, cover with a plate, and microwave on high for three to four minutes until they begin to soften. Drain any remaining moisture.

3. Crisp in the pan: Heat two tablespoons of cooking oil or butter in a frying pan over medium-high heat. Add the potato cubes in an even layer and season with salt and pepper. Fry them without moving them for three minutes to get a golden crust, then flip and cook for another three to four minutes until fully tender and crisp.

4. Add the eggs: Turn the heat down to medium-low. Use your spatula to push the potatoes aside slightly, creating two small spaces in the pan. Crack an egg into each space.

5. Cover and finish: Cover the pan with a lid or a sheet of foil and let it cook for two to three minutes, until the egg whites are fully set but the yolks are still soft and runny.

6. Serve: Slide the hash onto your plate and enjoy immediately. The runny yolk will mix with the seasoned potatoes to create a delicious, comforting meal.

I hope you enjoy your dinner.

i tried boiling sliced potatoes and then mixing in beaten eggs once when i had nothing else in the kitchen. you boil the sliced potatoes until their tender in a pot of water. after that you drain them and pour whisked eggs over them in a pan. it turned out fine when i made it but honestly im not sure about the exact cooking times or heat settings so you might need to test it.
