I am making a large batch of homestyle stuffed peppers filled with ground meat and rice for my weeknight dinner and meal prep... This is a classic comfort dish in our household, just like my grandmother made! I bought standard bell peppers and ground beef from the local supermarket, and I plan to divide the extra portions into containers for the fridge and freezer.

The raw meat mixture is stuffed into the sweet bell pepprs in a large pot with seasoned tomato broth on the stovetop... simmer the stuffed peppers on low heat for about fifty minutes to an hour once the liquid begins to bubble. you must keep the lid tightly on the pot throughout cooking so the heat distributes evenly and cooks the meat through to the centre. when the bell peppers are completely tender and the filling is cooked, turn off the heat and let them stand for five minutes.
