Hey folks!

So I was trying to whip up some homemade mayonnaise like a real adult LOL but it totally separated on me. It looks like a culinary disaster zone TBH. I'm usually just binge-watching cooking shows not actually making the stuff.

Why does mayo separate like this and can I even fix this catastrophe? Any kitchen wizards out there have some tips for a 20-something trying to survive on more than takeout? Thanks a bunch! :)

Mayonnaise separates due to rapid oil addition or disparate ingredient temperatures. The emulsion breaks. To restore. Combine one fresh egg yolk or a tablespoon of hot water in a clean bowl. Gradually introduce the separated mixture into this new base. Whisk continuously and slowly until re-emulsified. Maintaining consistent ingredient temperatures from the start is paramount.

Mayo separates because your adding the oil too fast or the ingredients are not the same temperature. Its an emulsion breaking. To fix it, get a fresh egg yolk or a tablespoon of hot water in a clean bowl. Slowly, like super slow, whisk in your separated mayo mixture drop by drop. This re-emulsifies it. Make sure your ingredients are room temp next time for best results. This saves you from wasting ingredients :)

ooh that's a tough one, sorry to hear it separated . i might be wrong but i think it usually happens if the oil is added too quickly at the start, or if the temperature of the ingredients wasn't quite right. it's about forming an emulsion, you know? and that can be tricky .

maybe try this to fix it: get a fresh egg yolk in a clean bowl. slowly whisk in a tiny bit of your separated mayo into the new yolk, like a drop at a time. once it starts to thicken, you can add the rest of the separated mayo more quickly, still whisking constantly. hopefully that works for you! good luck! you can totally do this!

mayo separates because you added the oil too quickly or the ingredients were not at room temp . this breaks the emulsion. it's a common mistake but wasting food is not smart

to fix it get a fresh egg yolk or a tablespoon of warm water in a clean bowl. slowly whisk in the separated mayo a little at a time until it emulsifies. then add the rest. good luck.

Aiya, you added teh oil too fast or ingredients too cold! Old school method: new egg yolk, slowly drizzle separated mayo. Don't waste good food! No need for wierd gadgets.
