I tried making paella for a quick weeknight dinner, but the rice stuck to the bottom of the pan. It actually turned out fine, but I do not know why it was so hard to scrape off. Can this be explained clearly so I can fix it for next time? :)

Paella naturally sticks to the bottom because of the starches in the rice and the creation of a prized crust called socarrat. When you cook paella, you should avoid stirring the rice after the broth is added, which allows those starches to settle, toast, and caramelize against the metal. To make cleanup much easier next time, ensure your heat source is evenly distributed and that you aren't cooking it too hot. If it sticks too hard, letting the pan soak in warm water with a little dish soap for twenty minutes will loosen everything right up.

That sticking is actually called the socarrat, and it is totally normal for a good paella!!! You shouldn't stir the rice once the broth goes in, which lets the starches form that crispy bottom layer?? If you want it to release easier next time, just control your heat better toward the end, or use a proper wide pan... It is a feature, not a bug, so don't worry about it!

that stuck layer is actually the socarrat, which forms when starch caramelizes on the bottom. solving this matters to me bc scrubbing burnt pans after a long shift ruins a quick weeknight dinner. next time try not stirring the rice after adding liquid and lower the heat slightly toward the end so it doesn't fuse too hard to the metal.
