Hello Jamie. Traditional Russian sauerkraut (often called *kvashenaya kapusta*) has a few key differences compared to standard western European style fermentation.
First, the choice of ingredients is usually very simple: white cabbage and salt, sometimes grated carrots or whole cranberries for flavor and natural sugars, but never vinegar, sugar, or caraway seeds which are common in German or other styles.
Second, the cabbage is traditionally shredded quite finely and heavily salted, then massaged by hand to extract the juices before being tightly packed into croaking crocks or glass jars with heavy weights on top to keep it submerged under its own brine.
Finally, fermentation is typically done at a slightly cooler cellar temperature and takes patience, developing a distinctively crisp texture and deep, clean sour flavor without any added starters.
