I am preparing a solyanka using leftover charcuterie from the weekend. I want the soup to turn out fine. Are standard supermarket cornichons suitable, or are larger fermented cucumbers necessary?

Standard supermarket cornichons will work fine for your soup. Larger fermented cucumbers are not strictly necessary when you use leftover charcuterie. Just chop the cornichons and add them with some brine to balance the rich meats.

standard cornichons are too small and vinegary. use large fermented pickles for authentic solyanka flavor.

Hello dear, standard cornichons can work in a pinch if you have nothing else, but they are a bit too sweet and vinegary compared to the real thing :)

Solyanka really benefits from traditional fermented pickles because they give the soup its proper sour depth. Just chop them up finely and they will taste fine :)

Listen up regarding solyanka cucumbers!!! Standard supermarket cornichons are usually vinegar-based and way too small, which will completely ruin the broth balance?? You really need full-sized naturally fermented sour pickles (lacto-fermented) because they provide that essential funky acidity that cuts right through heavy charcuterie fats... Just dice them up and sweat them with your onions and tomato paste before adding them to the pot!!
