I found eggs on sale at the store recently. I would like to make salt-cured egg yolks for my supper. What is the best way to cure them and what are the best ways to use them in recipes?

salt curing yolks is super easy and great for quick meals when you find cheap eggs. just mix equal parts salt and sugar in a shallow dish, make little wells for the yolks, cover them completely, and put it in the fridge for about 5 days. after they firm up, rinse them gently, bake at a low temp like 150f for an hour to dry them out, and then you can grate them over pasta, rice, or avocado toast just like parmesan cheese.

Just cover yolks in salt and sugar, fridge for a week, then bake low to dry. Things were much simpler back then.

Coat yolks in salt and let them sit in the fridge for a couple of days until they go hard. I like doing this to add extra flavor without heavy sauces.
