My chocolate chip cookies seem to be having an identity crisis; they are cakey instead of chewy. I wanted a proper cookie, not a tray of miniature sponge cakes. Why?

Hello Arthur. Cakey cookies usually happen for a few common reasons. Too much flour is a primary culprit, as packing flour or using too much of it traps air and absorbs moisture, leading to a cake-like texture. Another factor is leavening agents like baking powder or baking soda. Using too much causes the dough to rise too quickly and puff up like a cake. Finally, check your fat and sugar ratios. Using more white sugar than brown sugar, or using shortening instead of butter, often yields a lighter, fluffier bake rather than a chewy one. Try using more brown sugar and melted butter next time.

Too much flour or baking powder makes them cakey. Swap for macro-friendly unrefined coconut oil and more brown sugar.

I used to get cakey cookies all the time until I switched from shortening to melted butter and started using more brown sugar than white sugar for chewiness.

Reminds me of the old days when mother used to bake batches for us after school... Your cookies are turning out cakey because there is too much baking powder or your flour was measured wrong!! Make sure to use more brown sugar next time for that proper chewiness...
