I was making mashed potatoes as a quick weeknight side dish. I boiled the potatoes until tender and drained them. To save time and get a smooth consistancy without lumps, I used an immersion blender on a high setting. The texture instantly changed and became very stretchy, almost like glue or paste. It was impossible to eat. I added a little milk and butter but it did not fix the gummy texture. I am wondering if using the blender was the specific mistake that ruined the dish. I usually prefer boiling for a healthier option compared to frying, so I would like to know the best way to get smooth potatoes without this issue happening again. Provide the technical reason for why the starch reacted this way.

I used standrd Russet potatoes from the grocery store. I am looking for a step by step fix for next time.

The blender was the specific mistake because it breaks the starch molecules too much and releases a sticky glue. When you use a blender your basically turning the potatoes into a paste instead of light fluff. I tried this once because I was in a hurry for a weeknight dinner and it turned out bad. It is because the high speed shears the starch and its impossible to fix once it happens.

To fix this next time you should boil the potatoes until they are very soft and then drain them. Instead of a blender you should use a manual masher or even a fork to break them down. Add your milk and butter slowly and stir them in by hand so the starch stays where its supposed to be and you get that smooth texture.

People keep trying to use these fancy gadgets for everything when a simple masher worked just fine for my grandmother!!! The blender shears the starch and turns it into wallpaper paste. Stop overcomplicating it... Boil them up then mash them by hand and add your butter. It is not that hard to do it right the first time without all these modern machines ruining a good meal :)

the blender speed is too high for the starch it breaks the cell walls!!! starch leaks out and makes it glue... i did this for a party once it was a disaster!!! next time just boil them soft and use a hand masher or ricer... dont use the blender ever again for potatoes... it is much better to just do it by hand for the right texture!!!

The blades break the starch and make it sticky. You must boil the potatoes then use a masher. It will be smooth then.
